Arrow-root : quality product or fashion effect ? – A magnificent 19th century storefront jar belonging to the collections of the Pharmacy Museum in Montpellier was the starting point for a questioning about this product for which it was advertising. A drug, or rather a food product, fashionable at this time, it seems to have been neglected for a while to reappear today as a “bio” dietetic product in a diet from which gluten must be excluded.
