When feeling especially buoyant, I like to imagine a future in which busloads of students arrive in Upper Deerfield Township, New Jersey, where the agribusiness Seabrook Farms once operated. By the end of World War II, Seabrook Farms was unrivaled as a producer of canned, dehydrated, and frozen vegetables. At peak production, it employed nearly seven thousand laborers in its fields, plants, and trucking fleets. In 1947, the company directly cultivated eighteen thousand acres of land in southern New Jersey and bought produce from another six hundred small farmers to whom it also served as a creditor.1 A company town, Seabrook Farms ran cafeterias and commissaries and built and leased housing to its workforce.
