Saverio Manetti (1723-1784), fondatore con altri dell’Accademia dei Georgofili (1753), segretario e professore di Botanica presso la Società Botanica Fiorentina e poi Accademico della Crusca, dava alle stampe nel 1765 un suo trattato dal titolo "Delle diverse specie di Frumento e di Pane siccome della panizzazione", suddiviso in dieci Articoli, con il preciso scopo di contribuire a risolvere l’endemica e tragica carenza di grano a cui seguivano terribili carestie che sistematicamente decimavano la parte più povera della popolazione. Questa tragica situazione sociale ed economica aveva spinto studiosi, medici e botanici a studiare e ricercare strumenti per far fronte a tutto ciò, e Manetti fu tra questi. Per almeno tre lustri, inoltre, Manetti continuò a studiare e a raccogliere informazioni che registrò su numerosissime carte, nonché sui margini delle pagine a stampa di tre copie dell’edizione 1765 (oggi in unico volume conservato nella Biblioteca dei Georgofili) che costituirono la base di partenza per la sua ampia e complessa rivisitazione del testo in vista di una seconda edizione che, però, non trovò realizzazione. Questo volume presenta la seconda edizione inedita degli Articoli I ("Del Grano e sue Specie"), V ("Del Pane tanto semplice, che composto […] fatto generalmente di Biade"), VIII ("Di alcune qualità di Pane insolito a noi, ma di uso appresso qualche Nazione straniera") condotta sull’ultima revisione del testo.
