Patates, pain, et lard salé valaient-ils mieux que céréales, bacon et boeuf haché? La diète quotidienne et la santé au Québec, 1861–1941 (2016)

This paper explores and identifies certain conditions that allowed for the improvement of diets or hindered access to abundant and varied foods for urban workers and farmers of Quebec during the late 19th and early 20th centuries.  First, it explains how the historical understanding of questions related to diet improvement or degradation remain obscured by certain methodological limits.  Second, it compares the food comsumed by three households, using data from two sociographic studies conducted in the Charlevoix region in 1861 and in Quebec City in 1903, and an article describing the intervention of a dietician in a poor family in Montreal in 1941. This comparison reveals the great impact that income and material conditions had on daily diet during a period marked by industrialization and urbanization.
