In 2010, the Plaisance Plantation sugarhouse site, located on the west bank of the Mississippi River in Iberville Parish, Louisiana, was subjected to large-scale archaeological excavations prior to the construction of a new chemical plant. These investigations consisted of intensive archival research and extensive mechanical and hand excavations. The 159 subsurface features that were physically examined reflect the sugarmaking process and the evolution of sugar-making technology in antebellum Louisiana (1830-1860). This study focuses on the introduction of steam power to Louisiana's sugar plantations in the early nineteenth century and how that technological change is reflected archaeologically at Plaisance. The remains of the Plaisance sugarhouse differ significantly from those found at all other sugarhouse sites so far excavated in Louisiana, and in some ways more closely resemble their West Indian counterparts.
