Description An account, including recipes, cost, and comparisons with today's recommended dietary allowances, of two soups devised by Sir Benjamin Thompson (1753-1814)--Count Rumford--to feed the Bavarian poor at minimum cost. Napoleon, in 1812, urged the widespread establishment of soup kitchens to distribute this soup during the French food shortage. (G. B. KAUFFMAN)
